Cookies with extra virgin olive oil : our recipe

Try to imagine cold winter evenings gathered with your dearest ones in front of the fireplace, holding a cup of hot chocolate and maybe even reading a good book. What’s missing? Some exquisite cookies to dip in your cup to taste some moments of sweetness.

We want to suggest you a recipe for baking excellent cookies/biscuits,crumbly but healthy, replacing butter with extra virgin olive oil. As you already know, butter is an animal fat dangerous for our health since it is rich in saturated fats. On the contrary, extra virgin olive oil acts a crucial role in preventing heart diseases and sking ageing, thanks to the high concentration of unsaturated fats.

For this recipe, you can use our favola Moresca, a gentle extra virgin olive oil with a fresh fruity, easy to pair on many dishes and perfect for the dessert recipes.


190 g flour

1 egg

100 g sugar

1 sachet of baking powder

60 ml extra virgin olive oil favola Moresca

powdered sugar

a pinch of salt


Beat the egg with sugar in a large bowl for a few minutes until you get a frothy cream. Slowly add favola olive oil while continuing to whip.

In another bowl add the dry ingredients: flour and baking powder with the pinch of salt. Pay attention in sifting the ingredients to avoid any lumps. Then carefully blend the two mixtures to get the biscuit dough.

Mould the dough with the shape you prefer and put the biscuits in a baking tray in a pre-heated oven at 180°C for 15 minutes.

Serve the biscuits while still warm.

If you wish, you can cover the biscuits with some powdered sugar or with chocolate frosting made melting 1 chocolate cube and some milkin a bain-marie or in a microwave.


If you desire a tastier version, try adding to the dry ingredients oneteaspoon of bitter cacao powder and one of chopped hazelnuts.

Other options include half teaspoon of cinnamon or the grated skin of a lemon, perfect to pair with a citrus tea.
